Vegan Brownies

This past winter I decided to run all winter long — outside in the freezing cold. It was amazing. I felt like I was staring in my own Nike commercial. Running through fresh snow on the trails is like nothing I have ever experienced. It’s quiet and peaceful. All I have are my thoughts and the sound of my footsteps and the falling snow. Usually my thoughts consist of concentrating on not falling — it’s definitely being in the moment!


After a few months of this really really cold running, I stopped running for a couple of weeks. The snow was disappearing and so was the magic and I was simply cold to the bone. Not to mention, I really needed a new pair of running sneakers!

This is when I decided to bake.



Stay tuned for the recipe. It’s adapted from one of my favorite cookbooks, Plum. The cookbook is all vegan and so far all of the recipes that I have tried are delicious. So delicious that I have decided to only cook from this cookbook for the next couple of weeks. Stay tuned.



This video was taken early in the winter during one of my runs. I can’t even begin to explain how beautiful and peaceful it was outside. Now that it’s spring, it’s hard to imagine all of the snow that we had this past winter. Music by The Black Keys. Enjoy!
